Ingredients
  

  • - 1 cup pureed pumpkin
  • - 1 tsp molasses
  • - ½ tsp salt
  • - ½ tsp ground cinnamon
  • - ½ tsp ground ginger
  • - 2 egg yolks
  • - 1 large cupful flour
  • - 2 tsp baking powder
  • - 1 Tbsp sugar
  • - 1 cupful milk
  • - 2 Tbsp melted shortening
  • - 2 egg whites stiffly whipped

Instructions
 

  • In a medium bowl, mix together the pureed pumpkin, molasses, salt, cinnamon, ginger, egg yolks, milk, and melted shortening until well combined.
  • In another bowl, sift together the flour, baking powder, and sugar. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Carefully fold in the stiffly whipped egg whites, being cautious not to deflate them too much. This will help create a light and fluffy waffle.
  • Preheat your waffle iron according to the manufacturer's instructions and grease it well to prevent sticking.
  • Pour the batter into the hot waffle iron, using the appropriate amount for your specific model. Close the lid and cook until the waffles are golden brown and crisp, usually about 3-5 minutes.
  • Carefully remove the waffles and serve immediately with your choice of toppings.
