  • In a food processor, combine the Thai basil leaves, roasted peanuts, garlic, ginger, soy sauce, fish sauce, sesame oil, and lime juice. Pulse the mixture until finely ground and well combined.
  • With the food processor running, gradually pour in the olive oil. Continue to blend until the mixture reaches a smooth paste. You may need to stop and scrape down the sides of the bowl to guarantee everything is well incorporated.
  • Taste the pesto and adjust the seasonings as needed. You can add more lime juice for acidity, additional soy sauce for saltiness, or more nuts for texture.
  • Transfer the pesto to an airtight container and store it in the refrigerator for up to 7 days. Serve immediately or use it as a flavorful sauce for noodles, chicken, or fish.
