Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 zucchinis sliced
  • 1 bell pepper chopped
  • 1 red onion cut into wedges
  • 1 cup cherry tomatoes
  • 1/2 cup pitted olives
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C). In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
  • Add the chicken thighs to the marinade, guaranteeing they are well-coated. Allow them to marinate for at least 30 minutes to enhance the flavor.
  • While the chicken is marinating, prepare the vegetables by slicing the zucchinis, chopping the bell pepper, and cutting the red onion into wedges. Toss the vegetables with the remaining marinade in a separate bowl.
  • Arrange the marinated chicken thighs on a large sheet pan and spread the prepared vegetables around them in an even layer.
  • Bake the chicken and vegetables in the preheated oven for 30 minutes. After 30 minutes, sprinkle olives and feta cheese over the dish, then return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through and the skin is crispy.
  • Once done, remove the sheet pan from the oven and let it cool slightly before serving. Garnish with fresh parsley for added flavor and presentation.
